For the past two years, sous vide enthusiasts from around the world have come together on this date to eat, drink, and toast to this transformational cooking method. The annual festival is also a birthday celebration for Dr. Bruno Goussault, Cuisine Solutions’ chief scientist and founder of the Culinary Research & Education Academy (CREA). In Washington, DC, near the company’s U.S. headquarters, Cuisine Solutions is hosting a brunch at the sleek Conrad Washington, DC’s Estuary restaurant, partnering with notable and talented chefs including Estuary’s Bryan Voltaggio, Kyle Connaughton of SingleThread, David Deshaies of Unconventional Diner, Nicholas Tang of DBGB, and Todd Gray of Equinox. Last year’s DC celebration at the French Embassy included delectable dishes such as Sous Vide Smoked Salmon Terrine and A Pair of Pears, so guests can expect similarly inspired and unforgettable dishes at this year’s festivities. Professional chefs across the United States are invited to participate in a virtual recipe contest in partnership with Chef’s Roll. Enter your finest sous vide dish for a chance to win a trip to Paris, where you’ll study the technique with none other than Dr. Goussault himself. Last year, Chicago chef Rickie Perez earned the top prize with his winning Keto Steak “Salad” recipe. “Paris is a dream come true,” Perez told Sous-Vide magazine last year.
