Get the party started right with this elegant and bold take on the traditional mimosa. Incorporating the tartness of rhubarb (did you know rhubarb is a vegetable?) with the bright, floral taste of Saint Germain liqueur, a Rhubarb Mimosa starts the meal with sweet sparkle.
Served as a starter or alongside a main dish, our protein-packed Sous Vide Egg White Bites are a good choice for gluten-free guests and egg lovers alike. Served with arugula in a lemon vinaigrette, this beginner sous vide recipe is extra savory thanks to morel mushrooms and cheese. Cooked—and served—in a Mason jar, it also makes for a handsome presentation.
Bring on the Salmon
A velvety Pavé Salmon Confit mingles salty and sweet with golden beets and a kalamata olive tapenade. First quickly brined in a simple saltwater solution and then cooked sous vide for one hour at 136.4°F, the salmon is finally seared for one minute on each side. The beets also get the sous vide treatment and really shine on the plate.
A Precious Pudding
Finish the meal Italian-style with our Lemongrass Panna Cotta, which gets the gourmet treatment thanks to lemongrass oil extract. After enjoying a sous vide bath, the panna cotta’s cream and sugar mixture is refrigerated for at least four hours. A chocolate, almond, and pistachio crumble—with pomegranate arils—takes this winner to the next level.
