Honey, Lime & Melon Popsicle

This fruit-forward sous vide popsicle refreshes on a hot summer day.

1 small honeydew melon (about 30 oz after peeling)
¼ C honey
¼ C fresh lime zest
½ C sugar

Directions

  1. Set circulator to 181.4°F (83°C).
  2. Wash and trim melon, then cut in half. Remove seeds and inner membrane, then dice melon flesh into small cubes.
  3. Combine the diced melon, honey, lime zest, and sugar in a bowl and mix well. Transfer to a sous vide pouch and seal. Cook in water bath for 30 minutes.
  4. After cooking, pour liquid into popsicle molds and freeze for at least three hours, or overnight for best results.
