Vanilla Old Fashioned

Chef Curtis Stone makes a mean sous vide cocktail. He shared his recipe with Sous-Vide.

Ingredients

Vanilla Old Fashioned Cocktail

16 large ice cubes
1 C vanilla-infused bourbon (see recipe)
2 oz simple syrup (see recipe)
8 dashes Angostura bitters

 

Vanilla-Infused Bourbon

1 C Bourbon whiskey
1 vanilla bean, split lengthwise
2 orange peels, cut into inch strips, pith removed

 

Simple Syrup

1 C granulated sugar

  • Sous vide pouch
  • Fine-mesh sieve
  • Small saucepan
  • Cocktail shaker
  • Old Fashioned glass

Timing

Prepping time: 5 minutes (plus 10 minutes chilling time; excludes sous vide cooking)

Directions

For the Vanilla Old Fashioned Cocktails:

  1. Place 2 ice cubes into a chilled Old Fashioned glass.
  2. In a cocktail shaker, combine 2 oz bourbon,½ oz simple syrup, 2 dashes bitters, and 2 ice cubes.
  3. Stir 15 seconds, or until shaker is frosty.

For the Vanilla-Infused Bourbon:

  1. In a sous vide pouch, combine bourbon, vanilla, and orange peel. Seal and cook at 150°F (65.5°C) for 2 hours.
  2. Prepare an ice bath. Submerge pouch in ice bath for 10 minutes, or until chilled.
  3. Strain and reserve bourbon. Note: Bourbon can be infused up to two weeks ahead and stored in an airtight container at room temperature.

For the Simple Syrup:

  1. In a small saucepan over high heat, bring sugar and 1 cup water to a boil. Remove from heat and set aside to cool.
  2. Reserve 2 oz simple syrup for cocktails and save remaining syrup for another use. Note: Simple syrup can be made up to one month ahead, covered and refrigerated.

To Serve:   

Strain into prepared glass and serve. Repeat to make 3 more cocktails.
